a hearty salad for lunch and a balanced dinner. The intentional meal planning journey is proving to be successful, really taking the stressful edge off each day, as I don't have to wonder "what's for dinner?" Also, we talking about adding 1 more activity for the boys to our week, so the intentional planning and advanced prep (and more slow cooker meals) will really come in handy with these changes to our schedule! Bring on the karate lessons...
Now on to this week's yummy recipes...
I have no idea what happened to last week. It started in a blur, and a frenzy as our first "20 Meals from Costco for $150" plan went viral of Facebook. In a week's time, the post had over 1 million views. And while I wasn't carrying about my life, I was analyzing traffic dashboards, ad network dashboards, and income projections...trying to make sure that we didn't come out "in the negative" with the post. You see, when you have that much traffic on the site...you have to pay for it. A lot for it.
Apart from that, we had 2 pediatrician runs, 2 different kids needing antibiotics for different things. And the baby is 1 ear infection away from tubes. Yay for winter and cold/flu season! Both had colds that morphed into deeper infections. Sigh.
Given the kid sickness whirlwind coupled with the traffic whirlwind, I could barely keep up with things last week. I've kept up strong drinking my daily green smoothies, coupled with
1 1/2 cups gluten free rice krispies (or you can use regular quick cooking or GF quick cooking oats too)
2/3 cup peanut butter (any nut butter will do)
1/3 cup honey
1 cup shredded coconut flakes
1/4 teaspoon ground cinnamon
about 3/4-1 cup mini chocolate chips

I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
