thoughts of gratitude and love. And this week, we will be consumed with both. We will gather with family, friends and celebrate the many blessings in our lives.
There is nothing too big or too small to be grateful for. Start a list. Write them down. Just a few each day, and see if your outlook changes.
With that, I bid each of you a wonderful Thanksgiving Day, counting your blessings and relishing in gratitude.
On to this week's yummy Thanksgiving side dishes...
I adore the innocence of children and their perspective on so many things. Especially gratitude.
Our children are well cared for and well provided for, but still I find them spiraling into the traps of materialism and "the gimmes"...we read that Berenstain Bears book often! We try to counteract "the gimmes" and materialism with helping them count the many blessings in their life, and help them cultivate an attitude of gratitude.
In this culture that we live in, it's so easy to get consumed by the negative things we read and hear about...like the teenagers of America who go around knocking people out. For the thrill. Often times they are women or the elderly. Someone has died. This is just flabbergasting (is that a word?) to me. It's appalling. And it's embarrassing testament to the culture we live in.
That being said, I believe one of the best ways to counterbalance the negativity that we see today is with
2 Tbsp olive oil
1 small red onion
3 celery stalks
6 granny smith apples
2 cups vegetable, chicken or turkey broth
About 1 1/2 cups golden raisins (1 box)
1 tsp poultry seasoning
6 cups homemade or store bought cube stuffing
2 9″ pie crusts – homemade or store-bought
This is a perfect Gluten Free alternative to traditional stuffing!

The $5 Dinner Mom
I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
