and igloo to play in, as well as all kinds of cute foods and cakes...polar bear poop, reindeer water, "elk" sausage & more. We had a great time celebrating her birthday. And the chili dinner we hosted on Friday night...the best. Chili is such a great and frugal food to serve to a large gathering. I served a beef-bean chili, similar to the one featured in this e-magazine. And I also made a 5 1/2-Ingredient White Chicken Chili that was super simple to put together in the slow cooker, and allergy friendly for some of our friends. I'll be sharing the recipe on the website soon. In the meantime...
On to the recipes, shall we...
It feels like the weekend just started, but it's already over. We were busy hosting our church community group on Friday night, followed by a bazillion errands on Saturday, then my niece's first birthday party...a total "Pinterest party" with a polar bear theme. Then we spent most of Sunday working on a new Minecraft fiction books for kids project. Ryan and I have been in the process of writing several short Minecraft books, written for 2-4th graders. We are in the editing stage & brainstorming how we are going to get the word out about the books. I'll probably be sharing more about them when they are ready :)
So my niece turned 1 yesterday...and it feels like I was just driving across town where she was born. I remember my brother-in-law coming out after she was born, holding 2 balloons - blue and pink - and then popping the pink balloon. I was so relieved that my mom finally had a granddaughter. Ha! My sister put together a fantastic party...filled with activites for the boys,
1 Tbsp olive oil
3/4 lb. beef for stir-fry
1 Tbsp homemade taco seasoning
1 12 oz. frozen pepper and onion blend
1 15 oz. can diced tomatoes with garlic (or without will work too!)
6 corn tortillas
Serve with cantaloupe, watermelon or other refreshing fruit for side dish
2 lbs. ground beef
1 sweet white onion, chopped
4 cups chicken or beef broth
2 15 oz. cans diced tomatoes with their juices
1 6 oz. can tomato paste
1 lb. dried beans, 15 bean mix, red kidney beans, black beans or pinto beans
3 Tbsp chili powder
Serve with Caramelized Onion Cornbread
Cabbage is an excellent source of Vitamin C and Vitamin A as well as being high in fiber! While you can purchases preshredded cabbage, it's so easy to shred your own and will save you money!

The $5 Dinner Mom
I have a little problem. I can not make a meal for my family that costs more than $5. My mind is filled with prices on my favorite ingredients, and frugal recipes that can be made for less than 5 bucks. It’s unnatural, really. But, my pocketbook thanks me!
